Changing event color on existing SharePoint Online calendar

Hi I am having an issue figuring out how to change colors on certain calendar events within our SharePoint Online calendar. When I go through the steps to List Settings, create a column, Create a calendar within Calendar Overlay, and select a color for these events, ALL calendar events are basically duplicated with the new color along with the original color so there now is essentially two entries per calendar event.

What are we doing wrong?
