SharePoint Online changing user data within Site

To start off, sorry if my issue is difficult to understand - I'm brand new to all of this and don't know all of the technical terms. I've had this issue for a few weeks, and I can't seem to find an easy solution to this problem (I don't really know how to code). I'd also appreciate if your answers assumed that I know very little about SharePoint!

Anyway, my problem is about changing user data fields within a SharePoint Site. I'll lay out the scenario for you:

I have a user named James Smith. I share a Site with him so that he could fill out an Infopath form and submit it. This site uses workflows to make the submission and approval process work properly. 

This user then informs me that his name is not James Smith but rather Jim Smith. I then go to the Office 365 Admin Center to change his Name, Display name, his email, etc. I then go to the SharePoint Admin Center to change his info there as well. Afterwards, I check his name on the SharePoint Site, but it hasn't changed (even given enough time to sync). I try to change his name in a People/Group field on one of the document libraries, and I see both the changed name and the original names as options, but the new name switches to the old name as soon as I click on it. I also check the User Information List for the Site, and that hasn't changed either. I try to remove him from the Site and re-invite him, but that doesn't fix it.

That's the scenario I'm faced with. I need his name to update to the new one, or the workflow and the submission process won't work. Right now I have a workflow to handle the incorrect name, but that is not a permanent solution. I'd also like to be able to add data to new fields for all the users, but I can't seem to get that to work either.
